
Healthified Ham and Potato Casserole

makes:6 servings (about 1 cup each)
Ingredients:
4 cups cubed (1/2 inch) unpeeled red potatoes (4 medium)
1 teaspoon olive or canola oil
1 cup chopped green bell pepper (1 medium)
1/4 cup chopped onion
1 1/4 cups fat-free (skim) milk
2 tablespoons Gold Medal all-purpose flour
1/4 cup reduced-fat or fat-free mayonnaise
1/8 teaspoon black pepper
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
2 cups cubed cooked ham
Directions:
Place potatoes in 2-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to medium-low; cook uncovered 8 to 10 minutes or until tender. Drain.
Heat oven to 350F. In 10-inch nonstick skillet, heat oil over medium-high heat. Add bell pepper and onion; cook 3 to 4 minutes, stirring occasionally, until vegetables are tender.
Meanwhile, in small bowl, mix milk and flour with wire whisk until well blended. Stir into vegetables in skillet. Heat to boiling. Reduce heat; cook uncovered 2 to 3 minutes, stirring constantly, until thickened. Stir in mayonnaise, pepper and cheese; stir until cheese is melted.
Place ham and potatoes in ungreased 2-quart casserole. Pour milk mixture over ham mixture; stir to mix. Bake uncovered 25 to 30 minutes or until bubbly and light golden brown on top.

I truely would love to see this site get back to what it was/is. Lots of recipes/helpful hints with added comments to help each other out. Times are very hard for so many. A time when we need to pull together. I come in here everyday. Sometimes I leave posts, so often I get great twists on posted recipes, and other times.... Can't we all just get along (before SS takes this away). There was a site on AOL years back (may still be there...if AOL is..lol) anyhoo, was just like this one. I love it here because so many have great ideas making it a wonderful way to brainstorm!

I was just wondering how large is a serving? The list tells me calories but not serving size! And how many servings does it make? But I read comments first and to tell you the truth sounds like this is more of a place to be verbally not nice... thought it was to be a place to comment on the receipe and such as that?

I can't see why this wouldn't work with whatever meat your family likes be it chicken, turkey, pork loin roast, roast beef, etc.

I think it is time that the back-and-forth sniping at each other stops. I feel like Rodney King some days...Can't we all get along? I have to disagree that any of these posters think their words are gospel and more than once I have seen advice to make a recipe your own. I am sorry you are having a bad day...really. I have to agree that the healthified jokes are getting old, but people are trying to be amusing...I think. If you had strong negative feedback about what you thought were positive comments, then you know how different people have different perspectives and how nobody likes to be humiliated verbally. If you don't like it, please don't do it to others. I can see how you might have posted this in a moment of frustration, but I think it would be better if you didn't repeat it as a premeditated act. It drives people from the site and leaves me feeling less good. Of course, you are welcome to do as you please. That is the nature of the site. I sure would like it if this place were more civil in the future.

I've got to say not only for myself but for the many others that feel your comments are like fingernails on a blackboard, "that there are 3 of you (and look...you're all here) that really think you're OPINION is FACT and we couldn't make it through the day with-out following it to the letter". Oh yummy!!!! I use the huge ham steaks for this. I add fresh brocoli into it. I have always used a white sauce...I will try it with the mayo.
Instead of bell pepper I use a roasted chopped green chile.

Healthified even spell check does not even know what Healthified means, is this going to be the way we speak now, is this like cookie monster not being able to eat cookies, but he has to eat in moderation? I understand eating healthy, but why do we need to change stuff so much.. This sounds good but why don't they use the word reduce, instead.

Healthified is just a word. It is the name of the recipe and I don't think SS is going to change the name of the recipe just to suit peoples needs, likes, dislikes. So either deal with the name HEALTHIFIED or just move on!

I think it sounds good, comfort food to me. But if I am looking for comfort I'm going to throw caution to the wind and use all regular products, save the low/no fats stuff for when I'm in a "Healthifying" mood!
